Zucchini Pizza Recipe

This Pizza recipe yeilds up to 12 servings.

CRUST::
4c Shredded peeled zucchini;
...drained and pressed dry
2c Cooked rice
1 1/2c Shredded mozzarella cheese
1c Grated Parmesan
2 Eggs

FILLING::
1lb Ground beef; browned with
1md Chopped onion
1 1/2c Spaghetti sauce
1ts Oregano
1/2ts Salt
2c Shredded cheddar cheese

Step:1:Combine crust ingredients.

Step:2:Press into a greased 15X11" jelly roll pan.

Step:3:Bake at 400° 20-25 minutes until set and lightly browned.

Step:4:Combine filling ingredients except for cheddar.

Step:5:Pour over crust, sprinkle with cheese.

Step:6:Bake at 400° for 15 minutes.

Step:7:Let stand 5 minutes before cutting and serving.
